So I hate to be this guy but how can you make title cards to show at the beginning/end of your film that you can customize to read anything you want?
Also, how do you get rid of the title sequence the game inserts at the beginning of every movie?

To get rid of the default titles, simply go to post production, select the title sequence and delete it. Custom titles can be added using overlays (if you have S&E), backdrops or outside editing software if you prefer (such as Windows Movie Maker which is nice and free).

Well, first off outside editing is a much better way to go about things. You just export your movie from the movies (once you have done all the post production) and open it up in WMM (which is already on most PC's) and add the titles and then export it from WMM.
If you dont want to do it that way and you have Stunts and Effects then the best way to do it is with an overlay (800px by 450px I believe). If you dont have S&E you can use the backdrop (use a scene that allows for the flat backdrop in front of the curved one) and I think the dimensions are 1056 x 256...but honestly someone else might have to correct me there. Its been a while.
There might still be some useful tutorials on doing this on the tmo forums. I would look it up but cant access it at this time.

"Backdrop" sizes depend entirely upon what you class as a "backdrop".
In-game backdrops for TM usually start around the 1024x512 pixel size and grow from there (they have to be in dds format and in multiples of two to work; it's a convoluted process to discuss so won't go into it here, when there are easier ways of doing it).
You can film smaller props with tags attached or (the easiest way to do it), use an outside editing program to insert titles without having to faff around with using props at all.
